It tasted so amazing because it was moist and literally juicy because it was so loaded with rum. I had enough samples to likely equal a piece of cake, felt a little guilty, and bought a cake to take home before leaving the island.
I flew home with my cake, cut into it, only to be sorely disappointed because it was dry, not juicy, and there was hardly any rum flavor. That led me to believe they were literally pouring and dousing the cake samples at the shop with straight rum. It worked though because it got me to buy a cake.

Note regarding cake mix: when I originally made this cake in November 2017, 18.25-ounce boxes of yellow cake mix were the standard. Since then, boxes are more commonly found in the 15.25-ounce size range. Although I have not personally tested the cake using a 15.25-ounce box of cake mix, I am sure it will be fine. Yes both sides but the majority is when the cake is still in the cake pan and you can easily poke holes and pour the sauce and then let it sit and absorb. Then invert it, poke holes on top, pour the remaining sauce over the top.

This was awesome ! I personally love the rum cakes from the Caribbean and this was better. I added extra rum to glaze after I cooked the initial rum for a minute. I wanted to have it a little buzzy which it was but very mild. I def will make this again. Thank you!

I make this every Christmas and Thanksgiving.It is the most asked for dessert I make.Guarenteed smash hit.The only thing I add is chopped pecans in the bottom of the pan. It makes a crunchy top and really makes the cake perfect.
The cake portion of this recipe is based on a recipe from Perfect Cakes by Nick Malgieri. I changed the process, replaced the all-purpose flour with cake flour, swapped the white rum for dark rum and omitted the almonds. The glaze recipe is from my grandmother.
I don`t have the dark rum on hand but I do have some good quality rum that is the color of bourbon,just wondering if that can be subbed or will the results be compromised.Never made rum cake and would like to give it a go.THX
I made this cake and it was delicious. I made it in a fancy bundt pan. When the cake was done, it looked so pretty that I was actually scared to cut and taste it, for fear that it looked better than it was going to taste. Well, let me tell you, it was just as good as it was pretty.
Just wondering if I could mix the batter up the day before, keep it in the refrigerator over night and then bake it the next day? Was also wanting to dothat with the carrot cake also. I amgoing to be running short on timeand thought maybe this might save me some time. What do you think?

If I make the DIY pudding that has a lot of cornstarch in it, do I add all the cake ingredients including the 1/4 c cornstarch? I want to make it all from scratch but want to be sure the cornstarch amounts are correct: the amount in the pudding recipe as well as the amount in the cake recipe.
How do I adjust my rum cake recipe which I always made with an 181/2 0z cake mix to the new reduced size 151/2 cheaped down cake mixes? Or are there any companies still making the 181/2 size? I really hated the size change!

All I can say is wow this cake was dam good. My family finished it the same day. I used a signature Appleton rum blend that I purchased in Jamaica so the cake had a strong rum flavor. I think it made my 10 yr old a little tipsy ?. I will definitely make this again very soon!! Thanks for sharing!
I made this Rum cake for my friends Birthday yesterday. It is being acclaimed the best rum cake ever!They own a restaurant so I was nervous, I had to bake a good cake. All employees were begging for more. It was fun to make it from scratch, it took some time, but I will definitely make it again! Great recipe!
Made this cake and it had nice rise during the bake. At 50 minutes test with skewer showed done. Removed from oven and added syrup. Cake slowly deflated eventually to about half its volume. Result was quite dense and ended up discarding
This cake was very good but next time I will use traditional way of making cake by creaming butter and sugar, adding eggs and then the flour alternately with liquid. When I added liquid using these instructions it was difficult to mix with dry Ingredients. I will also boil syrup less than 5 minutes.
